Flour Or Semolina Momos
Momos are delicious dumplings that are popular in Tibet, Nepal, and northern India. They can be filled with meat or vegetables and served with a spicy sauce. To make momos, you need to prepare the dough, the filling, and the sauce. Here is a step-by-step guide to make veg momos:
Step 1: Making the dough
- Take 1cup flour and 1 cup semolina(suji),1teaspoon salt,1 teaspoon oil in a bowl. mix well.
- Gradually add 3/4 to 1 cup of water and knead into a smooth and soft dough. You may need more or less water depending on the flour quality.
- Cover the dough with a damp cloth or a lid and let it rest for 10 minutes
Step 2: Making the filling
- Finely chop 1 cup of cabbage, 1/4 cup of carrot, 1/4 cup of french beans, 1/4 cup of capsicum, and 1/4 cup of onion. You can also use a food processor to chop them.
- Heat 1 tablespoon of oil in a pan over medium-high heat and add 1 tablespoon of minced garlic and 1 tablespoon of minced ginger. Saute for a few seconds until fragrant.
- Add the chopped vegetables and salt to taste. Stir-fry for about 10 minutes or until the vegetables are cooked but still crunchy.
- Add 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1/2 teaspoon of black pepper powder, and 1/4 teaspoon of turmeric powder. Mix well and turn off the heat.
- Transfer the filling to a bowl and let it cool slightly.
Step 3: Making the sauce
- Boil 3 large tomatoes in water for about 15 minutes or until the skin peels off easily. Drain and let them cool slightly.
- Peel and chop the tomatoes and transfer them to a blender. Add 1 bell pepper (capsicum), 3 green chilies, 1 cup of chopped cilantro (coriander), 1 tablespoon of minced garlic, 1 tablespoon of minced ginger, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1/2 teaspoon of black pepper powder, and salt to taste. Blend into a smooth paste.
- Heat 1 tablespoon of oil in a pan over medium-high heat and add the tomato paste. Bring it to a boil and then simmer for about 10 minutes or until slightly thickened. The sauce is ready.
Step 4: Shaping the momos
- Divide the dough into small equal portions and roll them into balls. Keep them covered with a damp cloth to prevent drying.
- Take one ball and roll it into a thin circle of about 3 inches in diameter on a lightly floured surface. You can also use a cookie cutter or a glass to cut out circles from a large rolled sheet of dough.
- Place about a teaspoon of filling in the center of the circle and moisten the edges with water. Fold the circle in half and seal the edges by pressing with your fingers or using a fork. You can also pleat the edges by making small folds along the curve. Repeat with the remaining dough and filling.
- Arrange the momos on a greased steamer basket or plate without touching each other.
Step 5: Cooking the momos
- Fill a large pot with water and bring it to a boil. Place the steamer basket or plate over the pot and cover with a lid. Steam the momos for about 10 minutes or until they are cooked through. You can check by poking one momo with a toothpick or knife. If it comes out clean, they are done.
